As you probably already know, we are on a raw vegan and mostly fruitarian diet. However there is not so much variety of fruit in early spring and early summer period which makes me develop more creativity having almost the same fruit every day. So at the moment we have bananas from our local organic store and oranges that I ordered from Spain. Occasionally we get a few mangoes or papayas or longans from an Asian store, tropical fruit here is very expensive so it's just a treat for us. This week however we got some excellent blueberries from biocoop. I love good blueberries, big, juicy and sweet. What's more, it's still quite cold here (5-6°C at night and maybe 12-14°C during the day...) and some warm food is very nice to have for lunch... From all that reasons this soup was born...
LOW FAT RAW VEGAN, HIGH CARB, 80/10/10
- 6 to 8 medium ripe bananas
- 1 cup of fresh blueberries (or defrosted)
- 2 stalks of mild tasting celery
- 1/2tsp vanilla powder
- 1/2 cup water or coconut water
Put as many bananas as you wish into your blender. Add the vanilla powder and water and blend until smooth. Put the banana "milk" into a pot and warm it up till it's nice and worm to touch (not hot). Put the milk into a bowl and add finely chopped celery and blueberries. Enjoy.
This soup is filling and comforting and satisfies me for longer when it's warm. It's an excellent source of good sugars but also many minerals from celery and blueberries... It's also an excellent breakfast or supper if you prefer.
